This meal was featured on our shopping videos that we try to keep under ten dollars. But we went a little over when we found the thin cut Springer Mountain Farms Chicken Breast on sale. These being thin made it easy to thin them out to the perfect thickness for a good chicken parm. This is the poor man's version because it is missing the provolone or mozzarella on top and we subbed it out with parm cheese. The rotini is a fun mixup for the traditional noodle that would be used for this dish but it was a beautiful choice. It held that sauce perfectly and also made it easy to eat in one bite with the chicken.


SPRINGER MOUNTAIN FARMS THIN CUT CHICKEN BREASTS: Thin Sliced Boneless Skinless Breasts | Springer Mountain Farms

Ingredients
  • One Pack of Springer Mountain Farms Thin Cut Chicken Breasts
  • Italian Bread Crumbs - Enough to coat chicken breasts about 2 - 3 cups
  • One can of Italian Tomatoes
  • One can of plain tomato sauce
  • 1/2 cup of parmesan cheese
  • 2 TBSP of Tina Cannon's European Blend or any other herbal blend you prefer
  • Olive Oil for frying chicken
  • Three eggs beaten
Instructions
  1. Take your thin cut chicken breasts and thin them out with a meat tenderizer
  2. Dip the chicken breast into the egg than roll in Italian bread crumbs
  3. Add chicken breasts into a preheated pan or cast iron skillet with the olive oil
  4. Cook for 3 minutes on each side until golden brown
  5. While cooking chicken boil rotini
  6. In sauce pan combine both cans of tomatoes and your italian herb seasoning, turn heat down on low once hot and let simmer until rest of meal is done
  7. Assembly starts with a base of noodles
  8. Add on a chicken breast
  9. Add a layer of sauce
  10. Dust with your parmesan cheese
  11. Optional is dust with more herbal seasoning
